Poached Pollock with brandade mousse, cauliflower puree, scambled egg and picked cauliflower


Pickled and raw artichoke salad with Jerusalem artichoke mousse, artichoke puree and winter truffle


Salted foie gras with fruit confit, pickled radish and spiced bread


Roast John Dory with caramelized endvies, organe puree and orange sauce



Line-caught cod poach in black olive oil and basil pasta with salt and brandade



(Left 1 and 2 ) Greek yoghurt and honey icecream with confit lemon, lemon pannacotta, fennel dice and lemon puree
(Right 1 and 2)Pistachio meringue with pistachio mousse, praline and pistachio cassonade with pistachio jelly




Passion fruit mousse, vanilla pannacotta and passion fruit granite
